Hakugakusen Junmai Shinku is a premium dry sake from Yasumoto Shuzo, located in Fukui Prefecture. Made with Gohyakumangoku and Gin no Sato rice polished to 65%, and brewed using mineral-rich subterranean water, this sake offers a refined balance of smoothness and crisp dryness.

On the nose, it reveals polished rice aromas with gentle umami undertones. The palate is smooth and rounded, displaying clean flavors of steamed rice and soft cereal notes, finishing sharply with a dry, crisp edge. Though labeled “Shinku” (deep red) to signify dryness, it surprises with its gentle refinement before the clean finish.

Crafted using Yasumoto’s proprietary HGS-01 and HGS-02 yeasts that thrive in the brewery’s local environment and water, this sake captures a delicate balance of fruity and textural grace.
