Produced by Vilarnau, a winery with a rich history dating back to the 12th century, this cava is made with grapes harvested from their own vineyards near the “Vilarnau d’Espiells” winery. The grapes are chilled upon arrival at the winery to preserve their aromatic precursors, fermented separately in stainless steel tanks at controlled temperatures, and then blended and bottled for the second fermentation. The cava remains in contact with the yeast for a minimum of 15 months, enhancing its complexity and texture. v
