Théo Dancer sources his Savagnin from a conscientious grower in the village of Étoile, where the vines thrive on chalky clay soils layered over Bajocian limestone. This geological backbone lends tension, lift, and mineral clarity to the wine—hallmarks of Dancer’s emerging signature style.

Mike Bennie of The Wine Front captures the wine’s complexity vividly:

“It offers up scents of preserved lemon, light chicken stock notes, faint sea spray, a tonic water lift, some hay and straw notes, a bit of old wood character shows through. A waxiness and some grip in texture, plush lemon curd meets very tart pink grapefruit zing with some more chicken stock elements and, again, a bit of some musty wood character through the finish. A clatter of saline minerality lingers. Nice wine, perhaps missing some pep, but I reckon a good decant would make this very pleasing to drink slowly.” — 92 Points

The palate is textural and savoury, with a combination of plush lemon curd richness and tart pink grapefruit, framed by subtle oxidative tones and a lingering saline minerality. About The Winery

Théo Dancer is one of the rising stars of Burgundy. He studied at the Lycée Viticole de Beaune and has been working with his father at the family domaine for most of his life. He recently took the lead at the estate. His father, Vincent, had already gained strong recognition, but when Théo took over in 2020, he introduced a new direction in both vineyard work and winemaking.

As part of his négociant project, Théo focuses on healthy vineyards and works with reliable growers he has known for many years. This ensures that the vineyards and grapes are cared for properly and allows him to follow a low-intervention approach, which is central to his philosophy. In addition to traditional Burgundian varieties such as Bourgogne Chardonnay and Aligoté, Théo also sources Savoie Gringet, Jura Savagnin, and a Gamay from vines near Fleurie.

Everything under the Théo Dancer label is made with an emphasis on gentle extraction and early picking. The wines are clean and precise. Minimal-intervention techniques, such as natural primary and malolactic fermentations, ageing in neutral vessels, and very low sulphur additions, are part of the style of these wines.

Vinification takes place in used 456L barrels, without temperature control and without pumping over.

All Théo Dancer wines are made in the family cellars in Chassagne and therefore carry the Vin de France designation.
