This wine reveals a bouquet of fine raspberry and cherry fruit, accented by delicate floral notes and spices. On the palate it is medium-bodied, fresh and lively, with well-integrated acidity, silky tannins and a mineral-tinged, lingering finish.

It is a superb companion to roast pork tenderloin crowned with a fragrant herb crust, as well as to grilled or pan-seared duck breast served alongside a sumptuous berry-based sauce. Each pairing highlights the wine’s finesse, precision, and natural harmony.

About The Winery

Sylvain Cathiard’s grandfather came to Burgundy from Savoie and worked with Domaine de la Romanée-Conti (DRC) and Lamarche, eventually buying a few small vineyard parcels for himself. His son, André Cathiard, began bottling part of the production. Sylvain later joined his father, but eventually left to start his own small Domaine. When André retired in 1995, Sylvain took back the family vineyards through a rental agreement.

Since 2011, management of the estate has largely passed to his son Sébastien Cathiard. Under his leadership, the Domaine’s reputation and the prestige of its wines have reached remarkable heights.

In 2019 and 2020, Sébastien succeeded in expanding the family’s holdings with parcels in the Hautes Côtes, in the commune of Gevrey-Chambertin, and several regional vineyards planted with Aligoté. Today, the Domaine farms a total of 12.5 hectares, with 5.5 hectares located in Vosne-Romanée, Nuits-St-Georges, and Chambolle-Musigny, including tiny holdings in Clos de Vougeot and Romanée-St-Vivant.

All vineyards have been largely converted to organic farming methods, without the use of herbicides or pesticides.

Vinification

Fully de-stemmed fruit, 1–2 weeks of maceration, ambient-yeast fermentation with no added SO₂, ageing for 16–22 months in barrels (30–40% new oak for village wines, 60–70% for premier and grand crus), no fining, light filtration, and a small amount of sulfur dioxide added after malolactic fermentation.
