About The Winery

Roebuck Estates is an English sparkling wine producer based in Sussex PDO, with vineyards spread across East and West Sussex and Kent in southern England. The estate was founded in 2013 by two Sussex-raised entrepreneurs, Michael Smith and John Ball, who spent several years searching for suitable vineyard sites before assembling a portfolio of plots across the region. The winery is based near Petworth in West Sussex, around two hours from central London, in the rolling countryside close to the South Downs.

The name Roebuck refers to the roe deer that roam the Sussex countryside and appear in the estate’s emblem, symbolising the winery’s connection to the local landscape and its commitment to environmental stewardship.

Vinification

In the cellar, the grapes are hand-harvested and whole-bunch pressed, and each parcel is vinified separately. Fermentation takes place mainly in stainless-steel tanks, while around 5% of the wines ferment in 344-year-old Burgundian oak barrels to add texture and complexity. About half of the wines undergo malolactic fermentation. The wines are produced using the traditional method and undergo extended ageing on lees for a minimum of 36 months in bottle, followed by a further six months on cork before release
