Crafted in 2009 to commemorate the 125th anniversary of the brewery, this beer was named after Brother Isidorus, the monastery's first brewmaster.
Like other La Trappe beers, Isid'or undergoes top-fermentation with a specific yeast strain most active at temperatures between 18°C to 20°C. The ale continues to ferment after bottling, allowing its flavor and aroma to mature over time. This process ensures the authenticity and depth of the Trappist ale's unique aroma.
