This rosé is a blend of Shiraz, Cabernet Sauvignon, and Barbera grapes. The red grapes are harvested towards the end of summer and crushed before sitting on their skins for about three hours, extracting a light pink juice. The juice is then cold-fermented for three weeks to retain its fresh character, and fermentation is stopped early by freezing, leaving a hint of residual sugar.
