Now beautifully mature, the wine offers an expressive bouquet of blackcurrant, blackberry and sweet cherry alongside roasted herbs, liquorice, cedar, tobacco, saddle leather and black truffle. The 1986 Château Talbot is composed primarily of Cabernet Sauvignon and Merlot, complemented by smaller proportions of Petit Verdot and Cabernet Franc. Serve Château Talbot Saint-Julien 1986 at approximately 16 to 18°C. Given its considerable age, gentle decanting for around 30 to 60 minutes is recommended primarily to remove any sediment and allow its mature aromatics to open. Avoid prolonged exposure to oxygen, as the delicate tertiary characteristics of a mature Bordeaux can evolve quickly once the bottle is opened. A careful pour directly from the bottle can also be appropriate if the wine is particularly delicate.

This mature Saint-Julien is an excellent companion to roasted beef, beef tenderloin, lamb, venison and other game meats. Its combination of dark fruit, tobacco, cedar, leather and earthy complexity also makes it a natural partner for wild mushrooms, truffle dishes, roasted root vegetables and richly flavoured sauces. Mature hard cheeses can provide an elegant final pairing.
