Picking began on September 24 with the young Merlot parcels and continued through October 11 for the Cabernet Sauvignon. The estate notes that the Cabernet brought consistency, elegance and richness, while the Merlot contributed colour, fruit and tannin.

With more than two decades of bottle age, this Haut-Bailly has developed the secondary and tertiary characteristics that make mature Pessac-Léognan so compelling. Dark fruit has evolved toward cassis, dried leaves, tobacco, cedar and earthy tones, while the tannins have softened into a polished, silky texture. Its combination of freshness, mineral tension and savoury complexity gives the wine a poised and understated character rather than relying on sheer power.

For the best experience, serve Château Haut-Bailly 2001 at approximately 17 to 18°C. Given its mature age, gentle decanting is recommended primarily to separate any natural sediment and allow the wine to open gradually.
