The grapes are carefully selected and harvested by hand, then transported to the winery in small containers. This is followed by a 12-hour maceration period to extract aromatic compounds, after which the must is cooled. Before the start of spontaneous fermentation, the must undergo maceration with whole grape clusters added to the tank and fermented together with the juice. After fermentation, the wine is aged for around 7 months in stainless steel tanks and wooden barrels. Wines from this vineyard are distinguished by their delicate acidity, subtle aromatics, and rich extract.
